Zrazy z truflami

Skład:

  • 600 g polędwicy
  • 2 trufle
  • 2 łyżki masła
  • 1 łyżka mąki
  • 120 ml madery
  • 120 ml wywaru
  • 250 g zielonego groszku
  • sól
  • pieprz

Sposób przyrządzenia:
Mięso umyć, oczyścić z błon, pokroić na plastry grubości 1 cm, zbić je, posolić i oprószyć mąką. Kłaść na rozgrzanym maśle i rumienić z obu stron. Trufle umyć, zalać maderą i gotować ze skórkami przez 5 minut. Groszek umyć, zalać wywarem i ugotować. Do zrazów dodać groszek i trufle z maderą (skórki trufli odrzucić), zagotować, przyprawić solą i pieprzem.
