Ostrygi smażone w cieście

Skład:

  • 40 ostryg
  • 250 ml wina
  • 2 łyżki soku z cytryny
  • 150 g mąki
  • 1 łyżka masła
  • 2 jajka
  • 250 ml mleka
  • sól
  • pieprz
  • olej do smażenia
  • 2 cytryny
  • zielona pietruszka

Sposób przyrządzenia:
Wyszorować ostrygi, wyjąć ze skorupek i obgotować w winie. Oprószyć solą i pieprzem, skropić sokiem z cytryny i odstawić na 30 minut. W garnku rozbić żółtka, dodać mleko, mąkę, rozpuszczone masło, sól i pianę z białek ubitą na sztywno. Ciasto dokładnie wymieszać. Zanurzyć ostrygi w cieście i smażyć na oleju na złoto. Podawać przybrane gałązkami zielonej pietruszki oraz cząstkami cytryny.
